
$4.75 I’ve loved the idea of chorizo more than a lot of the chorizo I’ve eaten. Even when I think I want the vinegar and chili pepper power of this spicy ground pork sausage, too much of what I’ve had has been a cartoonishly greasy mess that leaves me full – of regret. I go on ordering it because I’m a believer, and Los Tacos Hermanos has shown me a different way without quite proving my case: This perfect taco, with its steamed double corn tortilla and onion, cilantro and salsa verde, goes its own way with a chorizo so mild it was shocking. (“Mild” doesn’t mean tasteless – the designation, along with “medium” and “hot” refers to level of heat sensation, not flavor.) This chorizo was flavorful yet clean, satisfying in a way that felt virtuous (thought it surely was not) because it was greaseless. And despite costing less than $5, it’s still plated with chips, more salsa and lime. ¡Ándale!
